Low histamine carrot and coriander soup

When you are on a low histamine diet, you are limited in your food options and it usually requires cooking from scratch meal. Don’t despair my friend, I’ve got you covered today with this simple, delicious and freezer friendly recipe (yay !). And another good thing is that it doesn’t require a lot of ingredients.

So this is a carrot and coriander soup. It’s light, fresh and nourrishing.

  • 1 tbsp olive oil
  • 4 large carrots, peeled and roughly chopped
  • 1/2 large onion, roughly chopped
  • 4 cups vegetable stock
  • 1 large bunch fresh coriander, roughly chopped


  1. Heat the oil in a large pan, add the onion and carrots and fry for 5 mins until softened.
  2. Add the coriander and cook for 1 min.
  3. Pour in the vegetable stock, bring to the boil, then reduce the heat.
  4. Cook for about 10-15 min until the carrots are tenders.
  5. Turn off the heat and let it cool for 5/10 min.
  6. Puree the soup with a hand blender until smooth.
  7. Reheat if necessary and serve.

Freezing tip : to freeze your soup as quick as possible, transfer it to a big bowl or container. Dip your container into your sink filled with cold water and ice. It will help to safely cool your soup. This way you can then freeze it faster and avoid any eventual histamine building or pathogens.
