Cauliflower isn’t always easy to incorporate into recipes. One of my favorite ways to eat it is to make a cauliflower and chicken casserole. It’s an healthy but filling dish. It’s easy to prep, the only downside is the cooking part which takes an hour so you can’t really do this recipe if you are hungry or in a hurry.

Low histamine cauliflower and chicken casserole
Ingredients
- 2 lbs cauliflower florets
- 8 oz shredded mozzarella cheese
- 4 tbsp coconut cream
- 2 bunches green onions, sliced (1 1/2 cups)
- 2-3 chicken breasts
- 1 garlic clove, crushed
- Fresh herbs (parsley, basil…) optional
- Salt
Instructions

Preheat oven to 350°F.

In a saucepan, add 2 inches of water and bring to a boil. Add cauliflower, cover, and cook for about 10 minutes.

Meanwhile, cut the chicken breasts into pieces. Add to an oiled frying pan, and sauté for a few minutes until chicken is cooked.

Drain the cauliflower and put it in a casserole dish.

In a large bowl, mix together the mozzarella and coconut cream. Add the onions, the chicken, and the garlic. Stir well.

Pour into the casserole dish and sprinkle on fresh herbs.

Cover dish with foil and bake for 25 minutes; remove foil and continue to bake for 5 or 10 minutes until golden.
