
I love casseroles, they’re perfect in winter or as comfy food. Celery root may seem intimidating at first (how do you peel it and cut it ? Kind of an odd shape/ugly duckling) but it tastes really good in this recipe. Here is France, one celery root is often quite big, you can make more than one dish with it. If you have celery leftovers, you can freeze it. Feel free to also freeze the casserole if necessary.

Low histamine celery root casserole
Ingredients
- 1 celery root
- 2 pounds potatoes or sweet potatoes
- 2 red onions
- 2 garlic cloves
- 2 and 1/2 cup of vegetable broth
- 1 and ½ cup of vegetable milk
- salt
Instructions

Finely dice your onions. Peel potatoes and celery root.Peel and slice the potatoes very thinly. Grate the celery. Lay the potato slices and celery on a clean tea towel and pat dry.

Spread the onion, potatoes and celery in a gratin dish.

Preheat the oven to 350°F. Crush garlic. In a saucepan, slowly heat the milk and vegetable broth. Add garlic and salt and let it reach boiling point. Remove from heat and pour into the gratin dish. Cover with tin foil and bake in oven for an hour. Remove tin foil and keep in oven for another 30 minutes.
