
I like this recipe because cripsy chicken feels like a treat (and it is ! ). But combined with a salad, it’s a reasonable and healthy option. It’s also a good idea to use dried gluten free bread you may have at home and avoid wasting it.
Regarding the mango dressing, you can use fresh or frozen mangos, it works either way.

Low histamine crispy chicken salad
Ingredients
- 1 lb boneless, skinless chicken breast
- 1/4 cup gluten free dried breadcrumbs
- 3/4 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ cup olive oil
- Salad mix of your choice
- Mango salad dressing :
- 1 cup cubed mango
- 2 tbsp coconut cream
- 1 tsp lemon juice
- 1 tsp garlic powder
- 1 tbsp minced ginger
- 1/2 tsp sea salt
Instructions

Preheat oven at 425 degrees.

Crush the bread into breadcrumbs. Add salt, onion and garlic. Mix well

Cut chicken into bite sized pieces and toss in a bowl.

Dip or roll the chicken in the olive oil. Then roll the chicken in the breadcrumbs mix until evenly coated.

Spread the chicken on a baking sheet or on a large oiled casserole dish. Put in the oven and bake for about 10-14 minutes until cooked through.

As the chicken bakes, prepare the mango salad dressing. Puree all the mango dressing ingredients together in a blender or food processor until smooth.

Layer the salad on a plate, drizzle with the mango dressing and top with the crispy chicken.
