Kale, Carrot and Apple low histamine smoothie


If you are following a low histamine diet, you are probably frustrated with all the food limitations. Don’t worry, you can still enjoy delicious meal, in this post I will give you a good example with a low histamine juice made with kale, carrot and apple. This smoothie is a great option for a breakfast but also for a snack. It’s also perfect when you feel like you need to get back on track after a “too much histamine crisis”.



This juice is tasty and not too “green”, the carrot and apple flavors are strong enough to overpower the kale.

As you probably know, fresh fruit and vegetable juices have a lot of benefits : they are full of powerful enzymes, antioxidants and nutrients, and are very easy to digest. It’s actually one of the quickest ways to deliver nutrients to your body. Make sure you drink your juice immediately after it has been made for maximum efficiency. Be careful about storage because juices don’t keep.

  • 7 fl oz water
  • 1 cup chopped kale
  • 2 carrots
  • 1 apple
  • 1/2 inch fresh ginger


  1. Remove kale stems and chop.

  2. Slice the apples, carrots and ginger into blender friendly pieces.

  3. Place ingredients into the blender starting with kale, then carrots, then apple, ginger and then water.

  4. Puree until smooth, about a minute or so.


Benefits of this smoothie for a low histamine diet :

Apples and kale : rich in quercetin (antihistamine and mast cells stabilizer ) and luteolin, antioxidants.

Carrots : Beta-carotene, like all carotenoids, is an antioxidant.

Ginger : antihistamine, nausea inhibitor and anti-inflammatory.
